Who…/ Santo Remedio is brought to us by husband and wife team Edson and Natalie Diaz-Fuentes .  Born and raised in Mexico City, Edson's career highlights include working at Casa Oaxaca, one of the San Pellegrino Latin America's 50 Best Restaurants and more recently as head of head of menu innovation for the Wahaca restaurant group. On the Menu…/ The bursts of fresh flavours that emerge from guacamole (available with the option of crispy Oaxaca grasshoppers!) instantly tell you that you're in for an experience beyond the ordinary.  You can also expect some of London's finest Tacos including Pork carnitas with pork confit, caramelised with orange juice & Coca Cola; and Grilled Cactus with sautéed sweetcorn & onions topped with salsa roja & feta cheese.  Oh, and make sure to ask if the stuffed Pasilla Chillies are on the menu too. Stuffed with plantain and beans, the super smoky aroma and firm yet gentle heat is a dream for barbecue fans. Other interesting flavour combos include Chicken Wings slathered in a seriously deep mole negro - a sauce made from chilies, nuts, dried fruit and chocolate; grilled Octopus with Yerba Santa (an herb found in New Mexico) and a garlic & jalepeno sauce. The Venue…/ The intimate two-storey restaurant with 45 covers is super-charming, with pictures of Edson's suppliers adorning the walls, rustic wooden furniture and brightly coloured tiles.
