Set over two floors with 160 covers, the menu has all bases covered, from working breakfasts through to leisurely lunches, catch-up dinners and after-work drinks. Menu highlights include steamed barramundi with dashi roast cabbage and daikion, lamingtons, oysters Kilpatrick and master stock chicken to share with salt baked kumara. There will also be Australian-inspired Saturday brunches. The drinks menu takes an Australasian inspired approach to cocktails, including The White Geisha (made from vodka, sake, lychee, and rose) and a Tim Tam Martini.

To put it simply, if you want Burritos and Fajitas, move on! Edson's launch menu pays homage to “Anojitos Mexicanos”, the wonderfully varied street food of Mexico, alongside dishes inspired by the cuisine of Mexico City, Oaxaca and Yucatan. Dishes include Chicken wings in mole negro (a sauce made from chilies, nuts, dried fruit and chocolate); traditional Tacos including Beef Barbacoa, (six hour slow cooked beef with chile ancho, pasilla & spices); and Grilled Cactus with sautéed sweetcorn & onions.

Expect casual Japanese cuisine using British seasonal ingredients with a menu comprising small dishes, with sections dedicated to different specialities including temaki, hibachi grill, yaki grill, tempura, sashimi and dishes inspired by Japanese classics. Highlights include Bream sashimi with shichimi crispy potato from the chilled section; and Sukiyaki wagyu beef, glass noodles, young leeks and shiitake from the classic dishes.
