Before developing desserts across Heston Blumenthal outlets as Head pastry chef at The Fat Duck, Hideko trained at Le Cordon Bleu cookery school, beginning her career at Restaurant Gordon Ramsay before moving to The Connaught to hone her pastry skills under Helene Darroze.
