Marylebone restaurant-cum-culinary hub Carousel have announced the first resident chefs for their 'Carousel presents...' guest chef series 2015.

Leading the way is Uyen Luu, food writer, chef and founder of the Vietnamese Supper Club until January 10th, followed by talented Swede Henrik Noren, founder of Stockholm restaurant GRO. January 27th sees Tom Ryalls from St John Bread & Wine and Moro take the helm, and finally New York ramen legend Yuji Haraguchi and Carousel's own Ollie Templeton through February and March. Working alongside Carousel's resident chef and co-founder Ollie Templeton, the guest chefs will create a limited-edition set lunch and 4-5 course dinner menu. Previous carousel collaborations have included Javier Rodriguez (Noma, Viajante, Tetsuya's), Laura and Harry Cummins (El Celler de Can Roca, Frenchie) and Tommy Forster (St John, Bocca di Lupo, Trullo).

UYEN LUU – Tuesday 6th to Saturday 10th January 2015

uyenluu Food writer, chef, and founder of the acclaimed Vietnamese Supper Club, Uyen comes with personal recommendations from Jamie Oliver, fellow food writer Rosie Birkett and Hemlsey & Hemsley. Offering a fresh, innovative twist on traditional Vietnamese cooking, Uyen's signature dishes include ‘Saigon fresh rolls, with pork belly, prawns, perilla, mint and coriander' and ‘Fern root noodle salad with pistachio and hot mint'.

HENRIK NOREN & GRO – Wednesday 14th to Saturday 24th January 2015

GRO Hi Rez Swedish chef friends Henrik Noren and Magnus Villnow, both formally of the celebrated F12 restaurant in Stockholm, opened the intimate 20-cover GRO in the capital in 2013. Quickly gaining a cult following in their home country, Henrik and Magnus are pioneers of imaginative Scandinavian cooking – a growing trend in London at present, offering simple, seasonal, honest food, with a focus on vegetables. TOM RYALLS – Tuesday 27th January to Saturday 14th February 2015

Chef Tom Ryalls arrives following time spent at both St John Bread & Wine and Moro, with a menu inspired both this experience and his extensive travels through Spain and Japan. Tom's focus is on ancient preserving methods, seasonality and provenance, and will incorporate pickling, smoking and salting techniques. His ‘Hunger Gap' menu will offer a balance between fish and meat, and will feature various ‘nose to tail' lamb dishes utilising the whole animal reared on his friend's farm in Cambridgeshire.

YUJI HARAGUCHI & YUJI RAMEN – Wednesday 1st to Saturday 11th April 2015

American-Japanese chef Yuji Haraguchi opened pop-up restaurant Yuji Ramen in New York in 2012, with his seven-course omakase tasting menus going down a storm with Brooklyn locals. His food philosophy is forward thinking and modern whilst staying true to his Japanese roots, with dishes such as ‘Miso and uni puree ravioli, topped with sea urchin, blood orange and fresh shiso leaf' on his menu. Each Carousel presents… set dinner menu is £35 per person and set lunch from £15.
