RECIPE - Pao de Queijo from Sim Senhora

Sim Senhora, the alter ego of Stoke Newington's coolest French Bistro, Oui Madam, will be serving up traditional Brazilian food such as Pao de queijo throughout the World Cup, created by head chef Marcelo Hirata.

500 gr Sour Starch

500 gr Manioc Starch

1 Cup of Sunflower oil

1 Cup of Milk

1 Cup of Water

Salt

500gr Grated Parmesan Cheese

10 Eggs

Method

  1. Preheat the oven to 180 degrees
  2. Place the oil, milk, water and salt in a pan and bring to the boil
  3. Remove and add the sour starch and manoic starch, stirring until you get a very smooth dough; let it cool
  4. Mix in the eggs and parmesan and roll the dough into small balls
  5. Place the balls on a baking tray and cook for 7-12 minutes, until golden brown
